SIMPLE COLD CHEESECAKE WITH WHITE CHOCOLATE AND RASPBERRIES
A perfect dessert for the prevailing African heat, which will not take you much time to prepare. Serniczek is very tasty: delicate, creamy, melting in the mouth. The addition of raspberry or redcurrant fruit greatly breaks the sweetness of white chocolate. I would recommend!
Ingredients (for a small cake tin with an average diameter of 18 cm): 
Bottom:
  • 430 g of dark oreo type cookies
  • 130 g soft butter
Curd:
  • 250 g semi-fat cottage cheese
  • 200 g mascarpone cheese
  • 1 glass of chilled cream fondant 30% or 36%
  • 3 tablets of white chocolate (300 g)
Additionally:
  • 200 g raspberries (or red currants)
Preparation:
  1. In the blender (or blender), crush the cookies, add the soft butter, mix to blend the ingredients. 
  2. Lay the bottom and sides of the springform pan with foil. At the bottom of the mold and on the sides, knead evenly the layer of biscuits. Put the cake tin in the fridge for the preparation of the cheesecake mass.
  3. Melt the white chocolate in the water bath.
  4. Curd cheese, for example in a blender, mix thoroughly with mascarpone, add melted white chocolate and mix again.
  5. Whisk cream with whipped cream, gently mix cheese with cream. Pour the prepared mass onto the cookie bottom, align the top.
  6. Place the cheesecake in the fridge for a few hours, preferably overnight. 
  7. Before serving, decorate the top with fresh raspberries or redcurrant fruits.
